Future Umami Lab is an interactive exhibition which aims to raise awareness about meat consumption, showing a future where we could keep eating meat, in a more responsible way.
I pictured a year 2050, when eating proteins won’t correspond just to consume animal meat, but instead, it will mean eating umami food. As a matter of fact, umami represents the fifth taste, the proteins’ one, fully distinctive in meat, fish, parmesan, tomatoes, mushrooms and more. Basically, the flavour of most of our favourite dishes.
Therefore, in the supermarket of the future, one will find the Umami Lab replacing the butcher area. No more just beef or chicken, but a wide number of different protein sources in meatball shape, to choose from: animal meat grown in vitro or produced in ethical farms, but also legumes-balls, vegetables ones, insects and much more. This system guarantees transparency in the production, access to the information about the ingredients and their origin, support and advice during the shopping experience, and above all, a variety of choices.
The Umami Lab project wants to show that this future is possible, starting from now. A scenario characterized by a new sustainable, ethical, fair and affordable food system, totally based on the variety. A potential future where the diversification of protein sources is strongly valued and easily accessible for everyone.
